2 cups cooked shredded chicken
1/2 cup mayonnaise
1/4 cup Greek yogurt
1/4 cup diced celery
1/4 cup diced red onion
1/4 cup chopped fresh parsley
1 teaspoon lemon juice
1/2 teaspoon garlic powder
1/2 teaspoon salt
1/4 teaspoon black pepper
6 slices turkey bacon, cooked and crumbled
4 sandwich rolls
Instructions
In a large bowl, combine the shredded chicken, mayonnaise, Greek yogurt, celery, red onion, parsley, lemon juice, garlic powder, salt, and pepper. Mix well.
Carefully fold in the crumbled turkey bacon.
Toast the sandwich rolls if desired.
Divide the chicken salad mixture evenly among the rolls.
Serve immediately or refrigerate until ready to serve.
Notes
