A delicious crustless quiche filled with fresh zucchini and tomatoes, perfect for a light meal or brunch.

  • 2 medium zucchinis
  • 1 cup cherry tomatoes
  • 1 onion
  • 4 eggs
  • 1 cup milk
  • 1 cup feta cheese
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried oregano

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Slice the zucchinis and tomatoes, and chop the onion.
  3. In a large bowl, whisk together eggs, milk, olive oil, salt, pepper, and oregano.
  4. Fold in the zucchini, tomatoes, onion, and feta cheese.
  5. Pour the mixture into a greased baking dish.
  6. Bake for 30-35 minutes, or until set and lightly golden on top.
  7. Let cool slightly before slicing and serving.
