These Mini German Pancakes are a delightful twist on a classic dish, featuring turkey bacon and fresh fruit.

  • 1 cup milk
  • 6 eggs
  • 1/4 cup sugar
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1/4 cup butter
  • 4 slices turkey bacon
  • 1 cup mixed berries

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. In a bowl, whisk together the flour, milk, eggs, sugar, salt, and vanilla until smooth.
  3. Melt the butter in a cast-iron skillet or oven-safe pan, then pour the batter into the skillet.
  4. Place the skillet in the oven and bake for about 20 minutes, or until the edges are golden and puffed.
  5. Meanwhile, cook the turkey bacon until crispy.
  6. Once the pancakes are done, remove from the oven, top with crispy turkey bacon and mixed berries, and serve immediately.
