This One-Pan Creamy Parmesan Chicken & Rice is the perfect easy comfort food that combines tender chicken and creamy rice in one delicious dish.

Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup Arborio rice
  • 2 cups chicken broth
  • 1 cup grated Parmesan cheese
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste

Instructions

  1. In a large skillet, heat olive oil over medium heat.
  2. Season the chicken breasts with salt and pepper. Add them to the skillet and cook until golden brown on both sides.
  3. Add minced garlic and Italian seasoning, cooking for another minute until fragrant.
  4. Stir in Arborio rice, coating it with the oil, and cook for a couple of minutes.
  5. Pour in chicken broth and bring to a simmer.
  6. Cover the skillet and cook for 18-20 minutes until the rice is tender and chicken is fully cooked.
  7. Remove from heat, stir in grated Parmesan cheese, and adjust seasoning if necessary.

Notes

  • For extra creaminess, add a splash of heavy cream before serving.
  • Garnish with fresh parsley for a pop of color.
