- 2 fillets salmon
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- 1 teaspoon dried oregano
- 1 teaspoon paprika
- 1 lemon (sliced)
- 1 cup cherry tomatoes
- 1/2 cup Kalamata olives
- 2 cups spinach
- Preheat the oven to 400°F (200°C).
- In a large bowl, combine olive oil, garlic powder, oregano, paprika, and season with salt and pepper.
- Add salmon fillets and coat well with the mixture.
- Place the salmon on a baking sheet lined with parchment paper.
- Add sliced lemon, cherry tomatoes, and olives around the salmon.
- Bake in the preheated oven for 15-20 minutes until the salmon flakes easily with a fork.
- Remove from oven, add spinach on top, and let it wilt for a couple of minutes before serving.
Notes
- For extra flavor, marinate the salmon for 30 minutes before cooking.
