  • 2 cups jasmine rice
  • 1 pound chicken breast, diced
  • 1 can pineapple chunks in juice
  • 1 cup bell pepper, diced
  • 1/2 cup onion, chopped
  • 3 tablespoons soy sauce
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon ground ginger
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon salt

Instructions

  1. In a large skillet, heat olive oil over medium heat.
  2. Add onion and bell pepper, sauté until softened.
  3. Stir in the diced chicken and cook until browned.
  4. Add pineapple chunks with juice, soy sauce, garlic powder, ginger, salt, and pepper. Bring to a boil.
  5. Add rice, stir well, cover, and reduce heat to low. Cook for 18-20 minutes or until rice is tender.

Notes

  • For added flavor, marinate chicken in soy sauce and garlic powder for 30 minutes before cooking.
  • This dish can be served with chopped green onions on top.
