A creamy and hearty potato soup enhanced with roasted garlic and topped with cheddar cheese.

  • 4 cups diced potatoes
  • 1 cup roasted garlic
  • 2 cups chicken broth
  • 1 cup shredded cheddar cheese
  • 1/2 cup heavy cream
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 tablespoons butter
  • Salt to taste
  • Pepper to taste

Instructions

  1. In a pot, melt butter over medium heat and sauté onions and garlic until translucent.
  2. Add potatoes and chicken broth. Bring to a boil, then reduce heat and let simmer until potatoes are tender.
  3. Blend the mixture until smooth.
  4. Stir in heavy cream and cheddar cheese until melted.
  5. Season with salt and pepper to taste.
