A hearty and warming potato soup that combines the savory flavors of smoked sausage with creamy potatoes. Perfect for a cozy meal.

  • 4 large potatoes, peeled and diced
  • 1 pound smoked sausage, sliced
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried thyme

Instructions

  1. In a large pot, heat olive oil over medium heat. Add the onion and garlic, sauté until translucent.
  2. Add the smoked sausage and cook until browned.
  3. Stir in the diced potatoes, chicken broth, salt, pepper, and thyme.
  4. Bring to a boil, then reduce heat and simmer for 20 minutes or until potatoes are tender.
  5. Blend the soup until smooth using an immersion blender (or in batches with a regular blender).
  6. Stir in the heavy cream and heat through before serving.

Notes

  • For extra flavor, add crispy bacon on top before serving.
  • This soup can be made in advance and reheated.
