A delicious and nutritious pumpkin bake that combines cottage cheese for a creamy texture, perfect for fall.

  • 2 cups canned pumpkin
  • 1 cup cottage cheese
  • 1/2 cup brown sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon nutmeg
  • 1/4 teaspoon salt
  • 1/2 cup rolled oats
  • 1/2 cup chopped walnuts

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, combine the pumpkin, cottage cheese, brown sugar, eggs, vanilla extract, cinnamon, nutmeg, and salt. Mix well.
  3. Stir in the rolled oats and chopped walnuts.
  4. Pour the mixture into a greased baking dish.
