  • 1 pound chicken breast
  • 8 cups chicken broth
  • 1 onion, sliced
  • 3 cloves garlic, minced
  • 1 inch ginger, sliced
  • 1 tablespoon soy sauce
  • 2 teaspoons fish sauce
  • 1 teaspoon sugar
  • 1 star anise
  • 8 oz rice noodles
  • 1 cup bean sprouts
  • 1 lime, cut into wedges
  • 1 cup fresh basil
  • 1 jalapeño, sliced

Instructions

  1. In a large pot, combine chicken broth, onion, garlic, ginger, soy sauce, fish sauce, sugar, and star anise. Bring to a boil.
  2. Add the chicken breast and simmer for about 20 minutes until cooked through.
  3. Remove the chicken, shred it, and set aside.
  4. Cook the rice noodles according to package instructions and drain.
  5. In bowls, add a portion of noodles, shredded chicken, bean sprouts, lime, basil, and jalapeño.
  6. Pour the hot broth over the ingredients and serve immediately.

Notes

  • This recipe can be adjusted for spiciness by adding more jalapeños.
