  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 tablespoon garlic powder
  • 1 tablespoon paprika
  • 1 lemon (for zest and juice)

Instructions

  1. Preheat your oven to 450°F (232°C).
  2. Prepare the chicken by removing the backbone with kitchen shears.
  3. Flatten the chicken by pressing down on the breastbone.
  4. Rub the chicken with olive oil and season with salt, pepper, garlic powder, and paprika.
  5. Place the chicken on a roasting pan, skin side up.
  6. Roast in the oven for 45 to 50 minutes or until the internal temperature reaches 165°F (74°C).
  7. Let rest for 10 minutes before carving.
