  • 4 medium zucchinis
  • 1 tablespoon olive oil
  • 1 cup diced onions
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup crumbled feta cheese
  • 2 tablespoons fresh dill, chopped

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Slice the zucchinis and place them on a baking sheet. Drizzle with olive oil and season with salt and pepper.
  3. Roast in the oven for 20-25 minutes until tender.
  4. In a pot, sauté the onions and garlic until translucent.
