  • 2 cups sushi rice
  • 2 cups water
  • 1 pound salmon fillet
  • 1/2 cup mayonnaise
  • 2 tablespoons soy sauce
  • 1 tablespoon sriracha
  • 1/4 cup green onions, chopped
  • 1/4 cup seaweed, shredded
  • 1/2 cup cream cheese, softened
  • 1 tablespoon sesame seeds

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Rinse the sushi rice under cold water until the water runs clear.
  3. Combine the rice and water in a pot, bring to a boil, then reduce heat and simmer covered for about 20 minutes.
  4. Meanwhile, bake the salmon fillet for 15-20 minutes until cooked through. Flake the salmon with a fork.
  5. In a bowl, mix the mayonnaise, soy sauce, sriracha, and green onions.
  6. Once the rice is cooked, spread it in an even layer in a baking dish.
  7. Top the rice with the flaked salmon and cream cheese.
  8. Spread the mayonnaise mixture over the salmon.
  9. Sprinkle shredded seaweed and sesame seeds on top.
  10. Bake for 15-20 minutes until golden and bubbly.

Notes

  • For a spicier version, add more sriracha to the mayonnaise mix.
  • Serve with additional soy sauce on the side.
