  • 1 onion, sliced
  • 2 garlic cloves, minced
  • 1 inch ginger, sliced
  • 4 cups chicken broth
  • 1 cooked chicken breast, shredded
  • 1 tablespoon fish sauce
  • 1 teaspoon sugar
  • 1 star anise
  • 1 cinnamon stick
  • 200 grams rice noodles
  • 1 cup bean sprouts
  • 2 scallions, sliced
  • 1 lime, cut into wedges
  • fresh herbs (basil, cilantro) for garnish

Instructions

  1. Heat the vegetable oil in a large pot over medium heat. Add the onion, garlic, and ginger, sautéing until fragrant.
  2. Pour in the chicken broth and bring to a simmer. Add the chicken, fish sauce, sugar, star anise, and cinnamon stick. Simmer for 15 minutes.
  3. Meanwhile, cook the rice noodles according to package instructions.
  4. Remove the spices from the broth and add the cooked chicken and noodles. Stir to combine.
  5. Serve the pho hot, garnished with bean sprouts, scallions, lime wedges, and fresh herbs.

Notes
