This Slow Cooker Cajun Jambalaya combines tender chicken, smoky sausage, and succulent shrimp with bold Cajun spices for an easy and delicious one-pot meal.

  • 1 pound chicken thighs, boneless and skinless
  • 1 pound smoked sausage, sliced
  • 1 pound shrimp, peeled and deveined
  • 1 cup bell peppers, chopped
  • 1 cup onion, chopped
  • 1 cup celery, chopped
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 can diced tomatoes, with juice
  • 2 cups long-grain rice, rinsed
  • 2 tablespoons Cajun seasoning
  • 1 teaspoon thyme
  • 1 teaspoon oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. In a slow cooker, combine chicken, sausage, bell peppers, onion, celery, garlic, chicken broth, diced tomatoes, rice, Cajun seasoning, thyme, oregano, salt, and black pepper.
  2. Stir well, and cover the slow cooker with a lid.
  3. Cook on low for 6-7 hours or on high for 3-4 hours, until the rice is tender and liquid is absorbed.
  4. During the last 30 minutes of cooking, add the shrimp and stir to combine.
  5. Once cooked, let it sit for a few minutes before serving.

Notes

  • Adjust the level of Cajun seasoning to your taste.
  • You can add more vegetables like okra or zucchini if desired.
