Ingredients

  • 4 pounds whole chicken, cut into pieces
  • 1 cup pitted prunes
  • 1 cup green olives
  • 1/2 cup capers
  • 1/2 cup red wine vinegar
  • 1/2 cup olive oil
  • 1/2 cup brown sugar
  • 8 cloves garlic, minced
  • 2 teaspoons dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. In a slow cooker, place the chicken pieces at the bottom.
  2. Add prunes, olives, and capers over the chicken.
  3. In a bowl, mix together the vinegar, olive oil, brown sugar, garlic, oregano, salt, and pepper.
  4. Pour the mixture over the chicken and ingredients in the slow cooker.
  5. Cover and cook on low for 6-8 hours, or until the chicken is tender.
  6. Serve hot, garnished with fresh herbs if desired.
