Ingredients

  • 1 pound boneless, skinless chicken breasts
  • 4 cups chicken broth
  • 2 cups chopped carrots
  • 1 cup chopped celery
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 cups egg noodles

Instructions

  1. Place chicken breasts in the slow cooker.
  2. Add chicken broth, carrots, celery, onion, garlic, thyme, rosemary, salt, and pepper.
  3. Cover and cook on low for 6-8 hours, or until chicken is cooked through.
  4. Remove chicken, shred it, and return to the slow cooker.
  5. Add egg noodles and cook for an additional 20-30 minutes on low.

Notes

  • For extra flavor, add a squeeze of lemon before serving.
  • This soup is great for freezing; just omit the noodles and add them when reheating.
