A warm and comforting soup that combines the sweetness of butternut squash and sweet potatoes with a spicy kick, perfect for cozy nights.

  • 1 medium butternut squash
  • 2 medium sweet potatoes
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 1 teaspoon cumin
  • 1/2 teaspoon chili powder
  • 4 cups vegetable broth
  • 1 cup coconut milk
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the onion and garlic, sauté until fragrant.
  3. Stir in the butternut squash and sweet potatoes, cook for 5 minutes.
  4. Add cumin and chili powder, mix well.
  5. Pour in the vegetable broth and bring to a boil.
  6. Reduce heat, cover, and simmer until vegetables are tender, about 30 minutes.
  7. Blend the soup until smooth, stir in coconut milk, and season with salt and pepper.
  8. Serve warm and enjoy!

Notes

  • For a spicier soup, add more chili powder or a dash of cayenne pepper.
