A deliciously layered Spicy Zucchini Ricotta Lasagna topped with crunchy oregano breadcrumbs that adds a delightful texture.

Ingredients

  • 3 medium zucchinis, sliced
  • 15 ounces ricotta cheese
  • 2 cups shredded mozzarella cheese
  • 1 cup grated Parmesan cheese
  • 1 large egg
  • 2 cups marinara sauce
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon red pepper flakes
  • 1 teaspoon dried oregano
  • 1 cup breadcrumbs

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a bowl, combine ricotta, egg, oregano, salt, pepper, and red pepper flakes.
  3. In a baking dish, spread a layer of marinara sauce at the bottom.
  4. Layer zucchini slices, followed by a layer of the ricotta mixture. Repeat the layers, finishing with marinara sauce.
  5. Top with mozzarella and Parmesan cheeses.
  6. Mix breadcrumbs with a little olive oil and sprinkle on top.
  7. Bake for 30-35 minutes until golden and bubbly.

Notes

  • Let the lasagna cool for 10 minutes before serving to set.
