Ingredients

  • 2 cups fresh peas
  • 4 slices turkey bacon
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 cup heavy cream
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. In a large pot, cook the turkey bacon until crispy. Remove and set aside.
  2. In the same pot, add olive oil and sauté onions and garlic until translucent.
  3. Add fresh peas and vegetable broth, simmer for about 10 minutes.
  4. Blend the soup until smooth and return to the pot.
  5. Stir in heavy cream, and season with salt and pepper.
  6. Serve hot, topped with crumbled turkey bacon.

Notes

  • This soup can be made ahead of time and reheated when ready to serve.
  • For a vegan option, use coconut cream and omit the turkey bacon.
