  • 1 cup rice
  • 2 cups bell peppers, chopped
  • 1 can diced tomatoes
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 cups beef broth

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large skillet, brown the ground beef over medium heat.
  3. Add the chopped bell peppers and cook until softened.
  4. Stir in the diced tomatoes, rice, garlic powder, onion powder, Italian seasoning, salt, and black pepper.
  5. Add the beef broth and bring to a boil.
  6. Transfer the mixture to a baking dish and cover with foil.
  7. Bake for 30-35 minutes until the rice is tender.
  8. Remove the foil and bake for an additional 10 minutes for a slightly crispy top.
