These Super Crispy Smashed Potatoes are a delightful combination of crispy texture, savory turkey bacon, and fresh herbs, perfect as a side dish or a comforting snack.

  • 2 pounds baby potatoes
  • 4 strips turkey bacon
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons fresh thyme, chopped
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Boil the baby potatoes in salted water until fork-tender, about 15 minutes.
  2. Preheat the oven to 450°F (230°C).
  3. Drain the potatoes and let them cool slightly.
  4. Place the potatoes on a baking sheet and gently smash each one with a fork or masher.
  5. In a small bowl, mix olive oil, garlic powder, salt, and pepper, then drizzle over the smashed potatoes.
  6. Sprinkle chopped turkey bacon on top of the potatoes.
  7. Bake for 25-30 minutes until crispy and golden brown.
