2 pounds baby potatoes
4 strips turkey bacon
2 tablespoons olive oil
1 teaspoon garlic powder
1 teaspoon salt
1/2 teaspoon black pepper
2 tablespoons fresh thyme, chopped
2 tablespoons fresh parsley, chopped
Instructions
Boil the baby potatoes in salted water until fork-tender, about 15 minutes.
Preheat the oven to 450°F (230°C).
Drain the potatoes and let them cool slightly.
Place the potatoes on a baking sheet and gently smash each one with a fork or masher.
In a small bowl, mix olive oil, garlic powder, salt, and pepper, then drizzle over the smashed potatoes.
