Thai Shrimp Soup

  • 1 pound shrimp, peeled and deveined
  • 6 cups chicken broth
  • 1 tablespoon fish sauce
  • 1 tablespoon lime juice
  • 2 stalks lemongrass, chopped
  • 3 kaffir lime leaves
  • 1 inch ginger, sliced
  • 2 Thai bird chilies, sliced
  • 1 cup mushrooms, sliced
  • 1 onion, sliced
  • 2 green onions, chopped
  • 1 handful cilantro, for garnish

Instructions

  1. In a large pot, bring chicken broth to a boil.
  2. Add lemongrass, lime leaves, ginger, and chilies; simmer for 10 minutes.
  3. Strain the broth to remove solids, then return to pot.
  4. Add shrimp and mushrooms; cook until shrimp are pink.
  5. Stir in fish sauce and lime juice.
  6. Serve hot, garnished with green onions and cilantro.

Notes

  • Adjust the spice level by adding more or fewer chilies.
