  • 4 large russet potatoes
  • 1/2 cup sour cream
  • 1 cup grated cheddar cheese
  • 1/2 cup crumbled turkey bacon
  • 1/4 cup green onions, chopped
  • 1/4 cup butter
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Wash and pierce the potatoes with a fork, then bake them for about 1 hour until tender.
  3. Let the potatoes cool slightly, then scoop out the insides into a large bowl.
  4. Add sour cream, cheddar cheese, turkey bacon, green onions, butter, garlic powder, salt, and pepper to the bowl. Mix until well combined.
  5. Spread the mixture back into potato skins or a baking dish.
  6. Bake for an additional 15-20 minutes until heated through and the top is golden.
