2 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda

1 teaspoon ground cinnamon
1/2 cup unsalted butter, softened
1 cup granulated sugar
2 large eggs
1 teaspoon vanilla extract
1 cup diced apples (peeled and cored)
1/2 cup brown sugar
1/2 cup quick oats
Instructions
Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
In a bowl, whisk together flour, baking powder, baking soda, salt, and ground cinnamon.
In another bowl, cream the butter and granulated sugar until light and fluffy.
Beat in the eggs one at a time, then stir in vanilla extract.
