- 2 cups cooked, shredded chicken
- 1 can (15 oz) white beans, drained and rinsed
- 1 can (4 oz) diced green chilies
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 4 cups chicken broth
- 1 tsp cumin
- 1 tsp oregano
- 1/2 tsp salt
- 1/2 tsp pepper
- 1 cup corn (optional)
- 1/2 cup sour cream (for serving)
- 1/2 cup cilantro, chopped (for garnish)
- In a large pot, sauté the chopped onion and minced garlic until translucent.
- Add the shredded chicken, white beans, and diced green chilies to the pot.
- Pour in the chicken broth and add cumin, oregano, salt, and pepper.
- Bring to a boil and then reduce to a simmer for about 20 minutes.
- If using, stir in corn and simmer for an additional 5 minutes.
