A delicious and warming white chicken chili recipe perfect for chilly days.

  • 2 cups cooked, shredded chicken
  • 1 can (15 oz) white beans, drained and rinsed
  • 1 can (4 oz) diced green chilies
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 tsp cumin
  • 1 tsp oregano
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1 cup corn (optional)
  • 1/2 cup sour cream (for serving)
  • 1/2 cup cilantro, chopped (for garnish)

Instructions

  1. In a large pot, sauté the chopped onion and minced garlic until translucent.
  2. Add the shredded chicken, white beans, and diced green chilies to the pot.
  3. Pour in the chicken broth and add cumin, oregano, salt, and pepper.
  4. Bring to a boil and then reduce to a simmer for about 20 minutes.
  5. If using, stir in corn and simmer for an additional 5 minutes.
  6. Serve hot with a dollop of sour cream and garnish with chopped cilantro.

Notes

  • For a spicier version, add diced jalapeños.
  • This chili can be made in a slow cooker for convenience.
