2 medium zucchinis, sliced
4 slices bread of choice
4 slices cheese (like cheddar or mozzarella)
2 tablespoons butter
1/2 teaspoon garlic powder
Salt and pepper to taste
Instructions
Heat a skillet over medium heat and add 1 tablespoon of butter.
Place the zucchini slices in the skillet and sprinkle with garlic powder, salt, and pepper. Cook for about 3-4 minutes until softened.
Remove zucchini and set aside. In the skillet, place two slices of bread, add cheese slices, then the cooked zucchini, and top with another slice of cheese and bread.
Cook until the bottom bread is golden brown, then flip and add the remaining butter to the skillet. Cook until the other side is golden and the cheese is melted.
Slice and serve warm.
