A delightful combination of zucchini and ricotta layered to perfection in this healthy lasagna.

Ingredients

  • 3 medium zucchinis
  • 15 oz ricotta cheese
  • 2 cups marinara sauce
  • 1 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 1 egg
  • 1 teaspoon Italian seasoning
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Preheat the oven to 375°F.
  2. Slice the zucchinis lengthwise into thin strips.
  3. In a bowl, combine ricotta cheese, egg, Italian seasoning, salt, and pepper.
  4. Spread a layer of marinara sauce at the bottom of a baking dish.
  5. Layer zucchini strips, followed by the ricotta mixture, then more marinara sauce. Repeat the layers.
  6. Top with shredded mozzarella and Parmesan cheese.
  7. Bake for 30-35 minutes or until the cheese is bubbly and golden.
  8. Let it cool for 10 minutes before serving.

Notes

  • For a heartier version, add cooked ground meat between the layers.
  • Fresh basil can be used for added flavor.
