  • 1 large onion
  • 2 cloves garlic
  • 1 tablespoon curry powder
  • 1 can coconut milk
  • 2 tablespoons olive oil

Instructions

  1. In a pot, heat the olive oil over medium heat and sauté the chopped onion and minced garlic until translucent.
  2. Add the curry powder and cook for another minute.
  3. Chop the potatoes and add them to the pot along with the chickpeas and coconut milk.
