A delightful summer side dish combining creamy pasta with the sweet crunch of street corn.

Ingredients

  • 8 ounces pasta
  • 2 cups grilled corn
  • 1 cup cherry tomatoes, halved
  • 1 red onion, diced
  • 1 cup mayonnaise
  • 1 tablespoon lime juice
  • 1 teaspoon chili powder
  • 1/2 cup cilantro, chopped
  • salt and pepper to taste

Instructions

  1. Cook the pasta according to package instructions; drain and let cool.
  2. In a large bowl, combine the cooked pasta, corn, cherry tomatoes, and red onion.
  3. In a separate bowl, whisk together the mayonnaise, lime juice, chili powder, salt, and pepper.
  4. Pour the dressing over the pasta mixture and toss to combine.
  5. Add chopped cilantro and mix well.
  6. Chill in the refrigerator for at least 30 minutes before serving.
