A delicious and easy recipe for a comforting casserole made with chicken and enchilada flavors.

Ingredients

  • 2 cups cooked shredded chicken
  • 1 can enchilada sauce
  • 1 cup black beans, drained and rinsed
  • 1 cup corn, frozen or canned
  • 2 cups shredded cheese
  • 8 corn tortillas

Instructions

  1. In a crockpot, layer half of the enchilada sauce, followed by half of the chicken, beans, corn, and cheese.
  2. Place four tortillas on top, then repeat the layers with the remaining ingredients.
  3. Cook on low for 6-8 hours or high for 3-4 hours until heated through and cheese is melted.
  4. Serve hot, garnished with your favorite toppings.
