This Eggplant Italian Sausage Gratin is a warm and comforting dish that pairs beautifully with a side salad or crusty bread.

  • 2 medium eggplants
  • 1 pound Italian sausage
  • 2 cups marinara sauce
  • 1 cup mozzarella cheese, shredded
  • 1/2 cup parmesan cheese, grated
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt to taste
  • Freshly ground pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Slice the eggplants into 1/4-inch rounds and sprinkle with salt. Let them sit for 30 minutes to draw out moisture.
  3. In a skillet, heat olive oil over medium heat. Add garlic and Italian sausage, cooking until browned. Drain excess fat.
  4. Add marinara sauce, oregano, and basil to the skillet, stirring to combine.
  5. Rinse eggplant slices and pat dry. In a baking dish, layer eggplant, sausage mixture, and mozzarella cheese in alternating layers.
  6. Finish with a layer of parmesan cheese on top.
  7. Bake for 25-30 minutes or until the cheese is bubbly and golden.
  8. Let it cool for a few minutes before serving.
