1 pound boneless, skinless chicken breasts
4 slices turkey bacon
1 can white beans, drained and rinsed
1 cup corn
1 onion, diced
2 cloves garlic, minced
2 cups chicken broth
1 teaspoon cumin
1 teaspoon chili powder
1/2 teaspoon salt
1/4 teaspoon black pepper
1 cup diced green peppers
1/4 cup fresh cilantro, chopped
Instructions
In a large pot, cook the turkey bacon until crispy. Remove and set aside.
In the same pot, add onions and garlic, cook until translucent.
Add chicken and cook until no longer pink. Stir in spices.
Add chicken broth, beans, corn, and green peppers. Bring to a simmer.
Let it cook for 20 minutes to develop flavors.
Shred chicken and stir back into the pot.
Garnish with cilantro and crumbled turkey bacon before serving.
Notes
For extra heat, add chopped jalapeños.
