A deliciously rich and creamy potato soup enhanced with cheddar cheese, garlic, and herbs, topped with crispy turkey bacon.

Ingredients

  • 4 large potatoes, peeled and diced
  • 1 cup cheddar cheese, shredded
  • 4 slices turkey bacon, cooked and crumbled
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 2 tablespoons fresh parsley, chopped
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. In a large pot, cook the turkey bacon until crispy. Remove and set aside.
  2. In the same pot, sauté the onions and garlic until translucent.
  3. Add the diced potatoes and chicken broth, and bring to a boil.
  4. Reduce heat and let simmer until the potatoes are tender.
  5. Using a potato masher, slightly mash the potatoes for a creamy texture.
  6. Stir in the heavy cream, cheese, thyme, salt, and pepper until the cheese is melted.
  7. Serve hot, topped with crumbled turkey bacon and fresh parsley.

Notes

  • For extra creaminess, you can blend part of the soup.
  • Experiment with different herbs for added flavor.
