2 cups rolled oats
1 cup all-purpose flour
1 teaspoon baking soda
1 teaspoon ground ginger
1 teaspoon ground cinnamon
1/2 teaspoon ground cloves
1/2 teaspoon salt
1/2 cup unsalted butter, softened
1 cup brown sugar, packed
1/2 cup granulated sugar
1 large egg
1/4 cup molasses
1 teaspoon vanilla extract
1 cup powdered sugar
2 tablespoons heavy cream
Instructions
Preheat the oven to 350°F (175°C).
In a bowl, combine oats, flour, baking soda, ginger, cinnamon, cloves, and salt.
In another bowl, cream together butter, brown sugar, and granulated sugar until light and fluffy.
Add egg, molasses, and vanilla to the butter mixture, mixing until combined.
Gradually add the dry ingredients to the wet mixture, stirring until just combined.
Drop tablespoon-sized amounts onto a baking sheet and bake for 10-12 minutes.
Let cool completely.
For the filling, mix powdered sugar with heavy cream until smooth, and spread between two cookies to form sandwiches.
Notes
For a spicier cookie, add extra ground ginger or cinnamon to taste.
