Ingredients

  • 1 pound flank steak
  • 4 ounces turkey bacon, chopped
  • 1 cup spinach
  • 1/2 cup ricotta cheese
  • 1/2 cup mozzarella cheese, shredded
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • Salt to taste
  • Pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Butterfly the flank steak and pound it thin.
  3. In a skillet, cook turkey bacon until crispy. Add spinach, garlic, and seasonings, and cook until spinach wilts.
  4. In a bowl, mix the ricotta and mozzarella with the turkey bacon mixture.
  5. Spread the mixture over the flank steak and roll tightly. Secure with kitchen twine.
  6. Season the outside of the steak with salt and pepper.
  7. Place in a baking dish and bake for 25-30 minutes.
  8. Let rest for 10 minutes before slicing.
