- 1 pound flank steak
- 4 ounces turkey bacon, chopped
- 1 cup spinach
- 1/2 cup ricotta cheese
- 1/2 cup mozzarella cheese, shredded
- 2 cloves garlic, minced
- 1 teaspoon Italian seasoning
- Salt to taste
- Pepper to taste
- Preheat oven to 375°F (190°C).
- Butterfly the flank steak and pound it thin.
- In a skillet, cook turkey bacon until crispy. Add spinach, garlic, and seasonings, and cook until spinach wilts.
- In a bowl, mix the ricotta and mozzarella with the turkey bacon mixture.
- Spread the mixture over the flank steak and roll tightly. Secure with kitchen twine.
- Season the outside of the steak with salt and pepper.
- Place in a baking dish and bake for 25-30 minutes.
- Let rest for 10 minutes before slicing.
