Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
  3. Add the butter, eggs, lemon juice, lemon zest, and vanilla extract to the dry ingredients and mix until smooth.
