  • 1/2 cup black beans, rinsed and drained
  • 1/2 cup chopped red onion
  • 4 slices turkey bacon, cooked and crumbled
  • 1 cup cooked chicken ham, diced
  • 1 avocado, sliced
  • 1/4 cup cilantro, chopped
  • 1/4 cup lime juice
  • 1/4 cup olive oil
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine the mixed greens, cherry tomatoes, corn, black beans, red onion, turkey bacon, and chicken ham.
  2. In a separate bowl, whisk together the lime juice, olive oil, salt, and pepper.
  3. Pour the dressing over the salad and toss to combine.
  4. Add the avocado and cilantro, gently mixing to avoid mashing the avocado.
