- 1 pound ground chicken
- 1/4 cup breadcrumbs
- 1 egg
- 2 tablespoons soy sauce
- 1 tablespoon sake
- 1 tablespoon mirin
- 2 tablespoons green onion, finely chopped
- 1 teaspoon grated ginger
- salt and pepper to taste

- In a large mixing bowl, combine ground chicken, breadcrumbs, egg, soy sauce, sake, mirin, green onion, ginger, and season with salt and pepper.
- Mix well until all ingredients are combined.
- Form the mixture into small oval-shaped patties.
